Egg Plant
Parmesan

1 egg plant, peeled and
sliced into ½ inch slices
2 eggs
Italian Bread Crumbs or flour
Mozzarella cheese, sliced or
shredded
Spaghetti Tomato sauce
(homemade or jar)
Olive oil
Dip egg plant slices into
beaten eggs and coat with bread crumbs or flour
Fry egg plant slices on
medium heat in olive oil until golden brown
Place egg plant slices in
baking dish layering alternately with layers of cheese and sauce with the top
layer being cheese over sauce.
Bake in 325 degree oven for
45 minutes to 1 hour or until done (Bubbling with top layer of cheese golden
brown.
