Homemade Pectin

Would you be interested in MAKING some pectin?  All you need is two
pounds of apples (crabapples work fine for this), and about 4&1/2
cups water.  Chop up the apples and cover with water, bring to a boil
and simmer for 45 minutes to an hour.  Strain by pouring into
cheesecloth or a jelly bag and let drain for an hour or two.  You can
use 2/3 cup pectin to 3 oz powdered gelatin.  Use fresh, or freeze up
to 6 months.
