Stuffed Peppers
From the Kitchen of Evelyn Schneider (Jackie’s mom)
1 ˝ lbs. Ground beef
1 chopped onion (small)
3 slices pickled hot peppers
chopped
2 pieces of whole wheat bread
– broken small
approx. 1C pizza/spaghetti sauce
(enough to make mixture wet)
salt/pepper
stuff pepper halves – spoon more sauce over peppers
cover with foil and bake 1 hr. (350)
putting slices of zucchini between peppers is really good
