daddy’s “happy
Cake” aka Mrs. Morrison’s mace (Funeral) cake

Original Recipe
1 cup milk
˝ cup (1/4 pound) butter
4 eggs, beaten
2 ˝ cups sugar
2 cups flour
2 tsp baking powder
˝ tsp salt
1 tbsp ground mace
˝ tsp ground mace
(Additional Ingredients)
˝ tsp ground cinnamon to the
batter, (especially if you have been generous with the mace) and 1 tsp ground
cinnamon to the topping. A pinch of ground all spice or nutmeg may be added as
well. These cut the over powering flavor of the mace.
Preheat oven to 350 degrees
F.
In a sauce pan, combine milk
and butter.
Cook milk and butter,
bringing to a boil and remove from heat.
Cream together the eggs and 2
cups sugar in a mixing bowl.
Sift together the flour,
baking powder, salt, and 1 tbsp mace.
Mix the dry ingredients into
the creamed mixture.
Add the milk and butter while
still hot and mix well (300 strokes by hand).
Pour into a greased and
floured 9 by 13 inch pan.
Topping
Mix the remaining ˝ cup sugar
and ˝ tsp of ground mace together and then sprinkle the mixture over the top of
the batter.
Bake 25 to 35 minutes.
Alternatively: Bake the cake in a 10 inch tube pan at 325
degrees F. for 1 hour.
Feel
free to experiment with additional mace and or the addition of cinnamon and
nutmeg after you try the original recipe.
CAREFUL! This cake is
addicting. DO NOT EAT THE WHOLE CAKE YOURSELF no matter how tempting it may be!
Also, don’t expect to get any serious work done for at least 24 hours.
